Dry Roasted Vegetables
8 to 10 red potatoes
2 medium onions
5 carrots
2 stalkes of celery
seasoning salt
Slice potatoes into bite size pieces. Slice carrots and one onion and mix with potatoes. Sprinkle with seasoning salt to taste. Slice remaining onion and layer on the bottom of a dutch oven. Fill dutch oven with potato, carrot and onion mixture. Add celery. Place lid on oven and bake in 350 degree oven. Check at about 30 minutes for doneness. Usually takes about 45 minutes.
If cooking on coals remember to have more coals on top than on bottom
